I remember seeing ads in the backs of magazines when I was a kid for something similar, Folbot, http://www.folbot.com/kayaks/

It would be good for hiking to remote locations, and make portages easier, if it isn't too hard to assemble and dissemble.

Folboats have been around since the 50s. They do pack down (my dad had one for years) but are really heavy.
