I only see one page of posts as well.

Go to User CP, Choose Edit Options and setup the following to Show all threads:
You may specify a time period from which to display threads. Threads older than the age you specify will not be shown.
You may specify a time period from which to display threads. Threads older than the age you specify will not be shown.

I reset the default for all forums to "Show All Threads".
