Looking forward to this one again after last week's sucess with Greek Chicken Pasta :
MONGOLIAN Chicken: (Tried it awhile back it was super and definitely differant )
tablespoon olive oil. onion sliced thin , 1lb boneless chicken breasts cubed, 1/2 tsp salt, 1/4 tsp black pepper . 2 cup chicken broth. 3 cloves thinly sliced garlic,,1/2 tsp ground cumin, 1/s p ground cinnamon, 1/2 tsp ground ginger, 1/4 tsp cayenne, 8 oz shredded carrot,, 1/s cup raisins, 1 cup coucous, 1/2 cup slivered toasted almonds.
heat oil in large non stick skillet medium high heat. add onion and sautee for 3 minutes, season chicken withh saltand pepper add to skillet and sautee3min stirring , add broth, garlic cumin, cinnamon and ginger and 1 cup water bring to simmer , add carrot and raisins simmer another 3 minutes, sir in coucous COVER it, remove from heat-- let sit for 5 minutes served topped with the slivered almonds
