Depends on the sole length of the shell. Different shells of the same size may have different sole lengths.

can a griffon 13 thats mounted for a size 28.5 fit a 27 without remounting?

I can't say specifically for the Griffon, but I've generally found that one shell size is usually close enough. Might be a slight difference between boot types, but you are talking around 10mm of adjustment you need.

My Jesters last year were mounted for a 26.5, and I was able to open them enough to fit my friends 27 into them. (The Jester and Griffon have the same adjustment system)

Beyond having a higher DIN, it has a wider foot print which is good for today's fatter skis. I think it's also a bit lighter.

Yes. It is built beefier than both bindings, as well as designed for wider skis like mentioned. If you were trying to save a few $$, get the Squire, over the M10.0, or Free Ten. Still designed like the Griffon, but not as heavy duty, and a Din of 11 I believe.
