Better late than never.

I tried something new here. It's called smoking a "Fatty"; which is basically a Jimmy Dean sausage, rolled out, then stuffed with something(s). It actually came out really good. It was a little dry for my liking, but everyone enjoyed it. Next time, I'll put it on for 1.5 hours vs. 2 hours.

Rolled out and stuffed: roasted red peppers, shredded mootz, my wife's red sauce and seasoning.

After stuffing, you just roll it up and plop it on the smoker.

I've done the wings just like the URL calls for...no smoke. They come out really good. But we decided to use the breading on chicken when we smoke it and it makes a really tasty outter "skin" on skinless chicken.

Thanks snoseek! I forgot...we used a few slices of smoked pepperoni in there as well.
