Better late than never.
I tried something new here. It's called smoking a "Fatty"; which is basically a Jimmy Dean sausage, rolled out, then stuffed with something(s). It actually came out really good. It was a little dry for my liking, but everyone enjoyed it. Next time, I'll put it on for 1.5 hours vs. 2 hours.
Rolled out and stuffed: roasted red peppers, shredded mootz, my wife's red sauce and seasoning.
After stuffing, you just roll it up and plop it on the smoker.
After two hours on the ol' smoker:
Sliced open:
Next to our standby BBQ'd Dizzy Pig chicken.
Now that the weather is cooler, I'll be making a few big batches of smoked cheese.
