I'll be ready. Custom built a box in my basement for curing sausages and aging cheese. 1st time curing sausage, hung it up last night. Earlier batch of cheese (cows milk Manchego) turned out pretty tasty. High hopes.

10 pounds of salami, 2 pounds each of Emmental and cheddar, and what will eventually be something like a prosciutto, hopefully:

While I fully understand people being left speechless at the awesomeness that is 10 pounds of homemade salami, I'm surprised no one in the peanut gallery had anything to say.

Except for the 3 pounds of pork and 2 pounds of pork fat, absolutely.
Or, it would be if it were blessed by a Rabbi, or handled according to kosher guidelines.

But other than that, yes.

And by yes, I mean no, not really.

Interesting... the closest I've gotten to what you're doing was trying to make homemade cheese from yogurt. It didn't go well. :oops: So how does the box work?

Darn that cat, eating all my meat...
The box is really just protection against dust and critters. The rigid foam is the most convenient building material, and with the vents closed provides some modicum of temperature stabilization. Next addition, if it comes to that, is to put a thermostat and small heater in it for the winter. Have to see how that section of the basement does when it gets really cold.
