I am making Chicken wings tonight. Right now they are thawed and raw in the fridge.

I am gonna give them a few minutes in the frier to give them a crispy skin, but how shood I pre cook them?

Just fry them all the way through. If your oil stays hot enough, they won't get greasy.

Yup. Patience is a virtue. Take the time to cook them in several small batches to keep that temp in the ideal range. Once you start overloading the fryer the temp plummets. You can always cook a batch and then stash them in a warm oven while you cook the next batch.

I haven't made wings in a while. I need to get a big self-contained deep fryer and do them i the garage or something. Cooking them in the kitchen stinks up the place. Like was mentioned, deep fry them all the way through. My Buffalo sauce receipe it pretty simple; equal parts Frank's Red Hot sauce and butter. Melt in a large skillet and coat the cooked wings.Yum!

Forget the amounts even though I made it two days ago.....

Put it all in a pot and let simmer, while stirring.

I find throwing them on the grill works pretty well, too. Not as crispy, perhaps, but a lot less spatter-ey. Plus, beers are good grill timers.

This thread got me going. I just whipped up two small batches of wings. Cooked them up out on the deck using a big stockpot with oil and a camping stove! Made buffalo using the above method and some garlic pepper by sauteing some in some butter and sprinkling with some McCormick California style garlic pepper. Washed it all down with a Long Trail IPA. Life is good! :)

Greg: Try a Turkey frier. Just be extra careful on your deck, particularly if it's trex or Timbertech, etc. Grease stains don't come out.

Nice ideas guys...I've never cooked my own chicken wings..I always just get them at a bar..My favorite wings are from Grumpys which is a BBQ roadhouse a few miles north of me. Those wings aren't fried but made in a smoker and they fall right off the bone..6 of them are $3.95 and I get Blue cheese and celery with them and often a cup of chili made with brisket. At the local bar..Monday is wing night with 30 cent wings,,Ive seen people eat 50 wings which is a freakin mountain...10 is plenty for me and 8 is ideal..

It's just PTL, but I did notice a few marks from some splash over. I'll probably do it in the garage from now on.

Not to lecture, but do be very careful with friers. The amount of airbourne grease should not be under estimated. Cook outside or under and appropriate hood (that gets appropriately cleaned.) It was "just a grease fire" that killed brothers Cahill and Payne. http://www.boston.com/news/globe/city_region/breaking_news/2007/08/officials_react.html

Hot oil is the way to cook wings. Just make sure that wings are all you cook.

You could always just goto Hooters! The wings aren't half bad, and the scenery usually is decent too! ;) Plus it is a family restaurant afterall!

Except they list Killian's as in imported beer.
At least they did 15 years ago, which is about the last time I was in a Hooters.

Well, those folks from down South at corporate HQ were a little slow back then ;) Plus since it is both brewed by Coors and has "Irish" in the title you could see wheer they easily could have been confused :rolleyes:

The night that i made the wings for, there was some very nice "scenery" at the house, and the house didn't qualify as a Family restaurant .:lol:
