How often do you wash your ski jacket / ski pants?

Never have. Fall down in some deep snow a couple times a season, that works.

The outer shell and bib get washed and waterproofed once during mid-season then at the end of the season before summer storage. The fleece midlayer gets washed about three times a season or when I have been sweating a lot into it, usually after skinning or during warm spring days. Baselayers and socks get one day of use and it's in the wash. Balaclava gets washed anytime I get snot on it.
