Things to do In/Around Burlington?

I'll be doing the spring break college visit tour starting this Sunday. The plan is to drive to Burlington Sunday, visit UVM on Monday starting at 10 until 12 or 1. I'm leaving for Rochester on Tuesday morning, so I've got the better part of the day Monday to spend in Burlington. Unfortunately, skiing is out of the question as my dad thinks that all of my college choices so far have been based on skiing. I'm up for anything, but am into the scenic/nature type of stuff if I can get my dad up for it. Any advice/tips would be greatyl appreciated.

You could always go for a scenic hike up Mt Mansfield... and happen to have your skis with you ;)

Tour the waterfront (That is where ECHO is too)
Tour Church St (you don't have to shop but there are some good spots to grab lunch)
Hike Mt Philo (short hike with great views 15 minutes south of B-town. FWIW it won't be skiable any more) http://w00.middlebury.edu/EL365A/Mount%20Philo.html
Drive Up to Bolton Valley ski area. (30 minute drive and a great place to get some turns in after classes (night skiing)).
A combo of those should keep you busy for a day or two.
