We stayed at Hunter's Cove Cabins right on the lake about halfway between Rangeley and Oquossuc a few years ago. Midweek it was $200 a night for an entire cabin, cheaper than a room at the Sugarloaf Hotel (which is pretty nice and I've splurged on that many times also). Rangeley is cool during the week but loud on the weekends with snowmobiles.

Has anyone been to Saddleback recently? Thinking of hitting it this year, but have not been there in a few years. Last time I stayed at the Rangely Inn in town, and liked it, but are there any good options slopside?
Yes, there’s all manner of ski-in ski-out condos at Saddleback. The downside is your only dining option after skiing is the base lodge pub, which is great if you’re ok with going to one place. Otherwise you drive 8 miles to town or cook in the condo.

Ate at Loon Lodge the weekend of the Eclipse. Our group was very happy with the food and service.

Have stayed in Rangeley year round, many times. There is slope side lodging, although somewhat limited and also limits food options. Plenty of VRBO rentals in the area as well. I've stayed several times at Rangeley Lake Resorts, which have cabins to rent a minute or so from Dallas Plantation Road. One benefit of the Rangeley Lake Resorts is that they have an indoor pool and hot tubs which were always a big draw with kids.
