I've skied 4-5 days a week for ten years, and i still usually get excited the night before. The seasons too short to slack, and any day spent on the mountain is a good day. I try to push my abilities for a portion of each day, but really just go out and have fun. also I think it's important to ski in all conditions, that's what makes e.c. skiers so good. even on really icy days (minus the scary crowds) it's fun just to rip down groomers.

Burned out or selective

I think that this question (skiing burnout) is beng posed to the wrong audience.
It's a bit like asking people at a brew-pub if they're sick of beer.

It's unlikely that people who quit skiing to spend their time posting on a skiing/boarding forum. Thus the views represented so far, of course will reflect a great enthusiasm for snow riding in whatever form.
I've known a number of people who were once were quite avid about the sport and quit for number of reasons. Being bored with it was just one of the factors. Life circumstances, injuries, expense, other new passions and responsibilities account for the rest.

I've been skiing for well over 30 some years and I must say that my level of enthusiasm for skiing has definitely decreased. Actually, I've become very selective as to what conditions, where and when I'll choose to ski. Hard packed, icy, man made cover, crowds, limited terrain are major turn offs. A lot of terrain that used to be challenging is just not all that interesting anymore.

I can still get really stoked for fresh natural cover, moguls, off piste and big mountain (Rockies, Europe) steep and deep terrain. As far as local ski scene (NE), unless there is good natural cover, I'm less than excited.

Although I'm only 19 and I guess it's possible that I'll lose the passion, I'm far more concerned about becoming a burn-out because of skiing than having my passion for it burn out.
