I'm finding each subsequent version of Windows to be going in the opposite direction than what you say... They bury more and more basic features and settings in wizard type interfaces and other such fluff that just gets in the way of me doing what I need to do.

Do a search for window7 God mode. You can create one shortcut on your desktop that accesses pretty much every setting. I have been using window 7 64 bit for a while now and I love it!
