Try Society for the Protection of NH Forests. They regularly buy land and either donated it to the State, the National Forest, or arrange land swaps. They also run several active preserves and tree farms.
I also like the Trust for Public Land but they take a slightly different approach.
Many groups buy land and then donate them to the state or federal agencies. It's a fairly common method of preservation, but it's hard to outbid developers.
